1. Trim pork loin, remove silver skin and leave on 50% of the fat. Now you will need to roll cut the whole loin. Below is a description on how to do so.
2. Start with a trimmed pork loin
Lay it lengthwise on a cutting board. Begin slicing horizontally
About 1 inch up from the bottom, cut lengthwise into the loin — but don’t cut all the way through. Stop about 1 inch before the edge.
Open the flap- Like opening a book.
Keep unrolling while cutting
Continue slicing into the thicker portion while slowly “rolling” the meat open as you go. Aim for a consistent thickness of about ¾ inch - 1 inch.
3. Trim up edges and cut loin into "rib" sized rectangular strips. Season with kosher salt and place in fridge for 30 minutes uncovered.
4. Remove from the fridge, add mustard as your binder, and season with fresh black pepper, and Broil King perfect BBQ spice.
5. Smoke for 2 hours @ 225F or until the pork loin reaches 130 F. Then place the ribs into foil lined with butter or into the cast iron Broil King Rib Roaster.
6. Cook until ribs reach temperature of 160 F
7. Remove from the BBQ and turn up the heat to medium high.
8. Grill the pork loin on the cooking grids getting your perfect grill marks. 10 o'clock - 2 o'clock.
9. Sauce and glaze with Broil King Perfect BBQ Sauce
