Ingrédients

Pork loin 2 lbs

MARINADE
Smoked baharat 4 tbsp
Kosher salt 3 tbsp
Chili flakes 2 tsp
Onion powder 1 tbsp
Garlic Powder 2 tbsp
Dry oregano 2 tbsp
Olive oil 2 tbsp
Lemon juice 1 tbsp

GARNISH
Pitas
Shredded lettuce
Diced tomato
Chopped pickles
Diced onion
Tahini or tzatziki

Directions

1. Slice pork into very thin chop likes pieces
2. Combine pork and marinade in a bowl
3. Marinate pork for 1-3 hours
4. Using the rotis rod and forks skewer your pork
5. Alternating your pieces between the prongs for balance
6. After all the pieces have been skewerd use the other rotis fork to hold the pieces in place
7. Add the rotis to the grill and set the rear burner to medium
8. Put a drip pan under the shawarma after 20min
9. Slowly shave the outside off after 35min and continue as pork continues to brown
10. Once all the pork has reached 160F/71C serve with garnish
