1. Preheat your smoker to 225F/107C
2. If using a gas grill set your outside burners to medium low and add your pellet box
3. Trim 1/2 cm of fat off the top of the brisket, remove any loose or silver skin from the bottom, and remove deckle
4. Sprinkle kosher salt over both sides of brisket
5. Rub yellow mustard onto both sides of brisket
6. Generously sprinkle steak spice over brisket patting it in as you go, typically half a bottle per side
7. Place your brisket on and allow to smoke for 5 hours until internal hits 165F/74C
8. Once internal has been reached place your brisket in the multi roaster
9. Add roaster with brisket back onto grill and adjust the temperature
