Grilled Nectarines with Ricotta, Prosciutto and Honey

Ingrédients

Nectarines x 3

Prosciutto x 12 pieces (cut in half)

Ricotta Cheese - 1/2 cup

Honey - Approximately 2 teaspoons, it is for garnishing.

Directions

Score around the nectarine in 1/2, then 1/4, then 1/8 wedges.

Twist the nectarine open and then remove the pit. Ensure all pieces are uniform in size and have a small divot where the pit used to be.

Cut the prosciutto in half lengthwise.

Take a teaspoon and using a 1/8 of a teaspoon add a dab of ricotta in the middle where the pit used to be.

Wrap Nectarine in prosciutto

Place onto a grill topper and then onto a preheated medium heat (450F) BBQ.

Turn once to crisp prosciutto all the way around.

Serve on top of field greens or arugula, drizzle honey over top of each nectarine.
