Creamy Dijon Smoked Salmon

Installation

1. Preheat your smoker to 350F/177C, can press the roast setting

Ingrédients

1 side of salmon

RUB
1/4 cup lemon juice
2 tbsp grainy mustard
3 tbsp kosher salt
2 tsp black pepper

DIJON SAUCE
1 cup orange juice
1 cup 35% cream
2 tbsp grainy mustard
1 tbsp kosher salt
1 tsp black pepper

GARNISH
1/2 pint cherry tomatoes
1 bunch sprouts

Directions

2. Coat the filet using ingredients listed in rub
3. Using foil lined with parchment add the filet and place on your smoker
4. Let the filet smoke for at least 40 mins
5. Add your cherry tomatoes to the smoker during the last 15 mins
6. On your side burner or stovetop, combine ingredients for Dijon sauce
7. Allow sauce to heat slowly, stirring consistently to prevent scalding
8. Once sauce thickens, remove from heat
9. Garnish each portion with sauce, tomatoes, and sprouts
