Ingrédients

  • 6 turkey legs
  • 2 tablespoon thyme
  • 1 tablespoon paprika
  • 2 tablespoon Kosher salt
  • 1 tablespoon pepper
  • 25 ml olive oil
  • 25 ml soya sauce

Directions

  1. For the spice blend, mix together thyme, paprika, salt, and pepper.
  2. Oil the turkey legs then rub with the spice blend until well coated, season under the skin if possible too.
  3. Place turkey legs directly on the cooking grates and baste with a mix of olive oil and soy sauce.
  4. Smoke at 250°F (121°C) for 2 to 3 hours, basting at least every hour until cooked through.
  5. As with all poultry, the meat should temp at least 165°F (74°C) at the thickest part to ensure a servable doneness.
