The Perfect Rotisserie Chicken

Ingredients

1 whole chicken

RUB
1/4 cup fresh thyme minced
1/4 cup fresh rosemary minced
1/4 cup fresh parsley
1/4 olive oil
2 tbsp minced garlic
1 tsp crushed red pepper
1 tbsp kosher salt
2 tsp black pepper

TO STUFF
2 lemons quartered
2 onions quartered

Directions

1. Set grids groove-side up and preheat grill to 400
2. Rinse chicken with cold water and pat dry then gently massage
3. Combine ingredients for marinade in a bowl and mix well
4. Stuff marinade in the pockets between the skin and the meat
5. Put extra filling in the cavities of the chicken
6. Truss (tie) chickens with twine and place covered in fridge
7. Allow the chickens to marinate for 4-12 hours
8. Preheat your smoker or grill to 350F/177C or use the quick-set button
9. Remove cooling rack and attach rotisserie motor
10. Set one of the forks onto the rod as a base to hold the chicken
11. Slide chickens down the spit and press into the bottom fork
12. Put birds opposite of each other (breast up, back up)
13. Insert rotisserie rod into motor and set handle in cradle bracket
14. Cook the chickens for 2 hours(20min per pound) until internal is 170F / 77C
