Ingredients

Whole chicken, 1
10' Tortillas 10 pack

BINDER
Yellow mustard 4 tbsp

DRY RUB
Kosher salt 2 tbsp
Paprika 1 tbsp
Chili powder 2 tsp
Ground cumin 1 tbsp
Garlic powder 1 tbsp
Dry oregano 1.5 tbsp

VEG MIX
Diced red pepper 1 whole
Diced green pepper 1 whole
Kernel corn 1 cup
Minced shallot 1 whole
Minced garlic 3 cloves

FILLING
Cooked brown rice 3 cups
Ground cumin 2 tsp
Paprika 1 tsp
Garlic powder 2 tsp
Kosher salt 2 tbsp
Oil 1 tbsp
shredded cheese

Directions

1.Using the IQUE set your smoker at 245 for start up if using gas set your outside burners to medium
2. Truss (tie) chicken if not already
3. Sprinkle salt over whole chicken
4. Rub whole chicken with mustard
5. Combine rub ingredients in a bowl
6. Coat whole chicken with mustard then dry rub
7. Place chicken on smoker until internal reaches 178F, if using gas add your pellet box 15 min before the chicken
8. Dice recommended vegetables and sauté together until soft
9. Bring water to a boil and add in rice and seasonings
10. Cover and bring to a rolling boiling then turn off heat and leave covered for 20min
11. Combine veg mix and filling ingredients in a large bowl and mix
12. Sprinkle shredded cheese on tortilla and add fill mixture
13. Roll bottom over fill, tuck sides in and flip towards top
14. Toast or grill to seal until golden brown
15. Serve with sour cream and enjoy
