Seafood Quesadillas

Ingredients

FOR THE FILLING

1 tin diced green chilies, drained
1/4 cup mayonnaise
4 green onions, finely diced
1 tbsp fresh cilantro, chopped
4 oz monterey jack cheese, grated
1/3 cup sweet onions, finely diced
1/2 tsp ground cumin
1/2 tsp ground coriander
pinch cayenne pepper
2 tbsp lime juice
zest of one lime
2 tsp salt
1 tsp pepper
1 lb cooked seafood (shrimp, crab, lobster), squeezed very dry

REQUIRED OR RECOMMENDED
Large flour tortillas 8
Salsa of choice

Directions

1. Preheat your grill on high and brush grids with oil
2. Combine ingredients in a bowl for the filling
3. On a clean surface, lay out half your tortillas
4. Spread filling evenly across the tortillas and place the extra tortillas on top
5. Reduce grill heat to medium and grill the quesadillas for 2 minutes per side slighting turning them after 1 minute for perfect grill marks
6. Let them cool slightly then cut into wedges and enjoy
