1. Take a pound of bacon, and season it with cracked fresh black pepper, and garlic powder. You can omit this step if you want to keep your bacon plain.
2. Place each strip down on a cutting board, stretching it slightly.
3. Season 1 kg of medium ground beef with 3 teaspoons of kosher salt, 2 teaspoons of perfect steak, 1/2 tsp of red chili flakes, and 1 teaspoon of galic powder.
4. Place small 4 oz of burger meat along the bacon strip. Making sure that all of the burger meat is the same height along the bacon strip.
5. Roll the bacon up with the burger meat into a pinwheel shape or spiral.
6. Smoke at 225 F for 1 hour and then remove the burgers from the grill. Turn up the gas to medium or 450 F and grill 3 minutes per turn for a total of 12 minutes. You can use a digital probe or the probe on your iQue unit to monitor the internal temperature. You want to reach 155F.
7. Baste your burgers with Broil King Perfect BBQ sauce, and toast your buns at the same time.
8. Place a 1/2 slice of cheese on top of each burger, remove the buns and allow the cheese to melt.
9. While the cheese is melting, assemble your burger base and toppings. Garlic Aioli, crispy onions on the bottom, and the lettuce and tomato on the top.
10. Place the fully cooked bacon burger onto the bun and serve with your choice of side. Enjoy!
