Reverse Seared Pork Tenderloin

Setup

Turn on your baron pellet hopper and set smoke to 250 ° F

Ingredients

Pork tenderloin - x2

Grainy Dijon mustard - 1/2 cup

Kosher salt - 3 tablespoons

Cracked Black Pepper - 2 tablespoons

Fresh parsley - ¼ bunch chopped fine

Broil King Perfect BBQ Sauce - ½ cup

Directions

1.  Trim the silverskin from the pork tenderloin and allow to temper towards room temperature for 20 minutes. Place tenderloins in a bowl and coat with grainy Dijon mustard, salt, cracked black pepper and chopped fresh parsley.

2.  Place a stainless-steel drip pan on top of the Flav-R-Wave™ in the middle of the grill. Then place the grids back on top, and fill the drip pan with warm water ¾ full.

3. Smoke pork tenderloin for 2 hours @ 250 ° F or until it reaches 125 ° F. Remove tenderloin from the grill and allow it to rest while your BBQ is heating up. Once your grill is preheated to 400 ° F, grill mark the tenderloin using our perfect grilling guide. Baste with Broil King Perfect BBQ Sauce during this process.

4. Remove when pork is 140 ° F and allow it to rest up to 145 ° F.  Slice on a bias and serve with your choice of sides.
