Grilled Peach Salsa Pork Tenderloin

Ingredients

1 pork tenderloin

MARINADE
2 tbsp soy sauce
2 tbsp fish sauce
2 tbsp lime juice
1 garlic clove minced
1 tsp grated ginger
1/4 cup vegetable oil

PEACH SALSA
2 roasted red peppers
6 whole peaches skinned
2 tbsp olive oil
1 pint rainer cherries
1/2 cup blueberries
1 shallot minced
1 jalapeno deseeded and minced
1/4 cup lime juice
1 tbsp honey
3 tbsp chopped cilantro
1 tbsp kosher salt
2 tsp black pepper

Directions

1. Combine ingredients for marinade in a bowl and add the tenderloin
2. While the pork marinates, start your grill on high and begin roasting peppers
3. Reduce heat to medium, skin and halve peaches then brush with oil and add to the grill
4. Grill the peaches for 6 minutes, turning every 2 minutes, until caramelized
5. Add cherries to the grill for 5 minutes and remove to cutting board
6. Chop peppers, peaches, and cherries into small pieces and add to a bowl
7. Combine the remainder of salsa ingredients with fruit mix and let rest for 1 hour
8. Keeping the grill at a medium to high temp, add tenderloin at a 45 angle
9. Grill for 3 1/2 minutes, turning an opposite 45 angle each time for perfect grill marks
10. Allow tenderloin to rest under foil for 10 minutes before serving
11. Slice the tenderloin into thick medallions and serve with salsa on top or on the side
