Setup

Remove 2 grids and place in an exact fit plancha accessory.

Ingredients

Ground Chicken x 1 lb

Red Onion - 1/2 onion, diced small

Mayonnaise- 1 tablespoon

Egg - 1 x large white egg

Panko Bread Crumbs - 1/2 x container of panko - added in stages

Burger set:

Boston Bibb lettuce

Beefsteak tomatoes

Pickled Red Onion

Provolone Cheese

Bacon

Smash Sauce

Seasoning:

Chili powder - 1 tsp

Garlic powder - 1 tsp

Onion powder - .5 tsp

kosher salt - 2 tsp

black pepper - 2 tsp

ground mustard - 1 tsp

smoked paprika - 1/2 tsp

cumin - 1/2 tsp

SMASH SAUCE:

3 tablespoons mayonnnaise

1 tablespoon ketchup

1 teaspoon yellow mustart

1 teaspoon relish

2 teaspoons Broil King Perfect BBQ Sauce

Directions

1. Combine all vegetables with the ground chicken

2. mix together seasoning mix

3. Add seasoning, mayo, egg and panko to spiced ground chicken mixture.

4. Scale out to 80 G per patty and chill for 15 minutes.

5. Place your exact fit plancha insert into your BBQ and preheat on medium. Once your griddle is hot, cook your bacon on the plancha, and remove it and allow the fat to drain from it. Then place 2 smashed chicken patties on the griddle and cook for 3 minutes per side or until internal temperature reaches 167 ° F.
