Brined Pork Chops

Ingredients

Pork chops 4 each

BRINE
Water 3 cups
Kosher salt 1/4 cup
Sugar 1/4 cup
Molasses 2 tbsp
Smashed garlic 2 cloves
Bay leaves 2 each
Dry thyme 1 tbsp
Peppercorns 1 tsp
Ice cubes

RUB
Garlic powder 1 tsp
Onion powder 1 tsp
Ground cumin 1 tbsp
Ground coriander 1 tbsp
Chili powder 1 tbsp
Dry mustard 1 tsp
Dry oregano 1 tsp
Brown sugar 1 tbsp
Black pepper 1 tsp
Kosher salt 1 tbsp

Directions

1.Combine ingredients for brine except ice in a pot and bring to a boil
2.Add ice to boiled brine to cool and submerge pork chops for 1-12hours
3.If you want to ad smoke prepare our pellet box and place under grids
4.Preheat your grill on high until the pellet box starts to smoke
5.Remove pork chops from brine and pay dry with paper towel
6.Reduce your grill heat to medium and place chops on opposite side of pellet box
7.Grill each side for 6 minutes flipping opposite every 3min for perfect grill marks
8.After the last flip brush chops with your favorite sauce and let carmelize for the remainder
