Ingrédients

1 beef tenderloin

RUB
1.5 tsp ground coriander
1.5 tsp ground cumin
1 tsp brown sugar
2 tsp kosher salt
1/4 tsp cinnamon
1/4 tsp ground cloves
1 tsp black pepper

MUSTARD SAUCE
8 tbsp melted butter
2 shallots minced
1 garlic clove minced
2 tbsp grainy dijon

1.5 tbsp lemon juice

Directions

1.Preheat smoker to 350F/177C, if using charcoal add soaked mesquite wood chips
2.Combine ingredients for rub and thoroughly coat tenderloin
3.Place tenderloin on grill and cook indirectly, rotating every 10min
4.Cook until internal temp reach's 130F/54C
5.Wrap and rest for 10min before serving
6.Combine ingredients for mustard sauce and set aside
7.Slice into 1/2-inch slices, drizzle with mustard sauce and enjoy
